        DAIQUIRI
  - 2 oz White Rum
  - 1 oz, plus 1 tablespoon lime juice
  - 1/2 oz simple syrup
 
Fill cocktail shaker with ice and add rum, lime juice and simple syrup.  Shake and strain into your cocktail glass.  Garnish with a lime slice.
CUBA LIBRE
  - 1 oz White Rum
  - 3 oz Coca Cola (preferably Mexican Coke made with real sugar)
 
Fill highball glass with ice, and add rum and Coca Cola.  Garnish with a lime slice.
MOJITO
  - 2 oz White Rum
  - 3/4 oz lime juice
  - 1/2 oz Simple Syrup
  - 3 Mint Leaves
  - Club Soda (soda water) to top
 
Lightly muddle the mint leaves with the simple syrup in a cocktail shaker.  Add ice, rum and lime juice. Shake and strain into a highball glass with ice.  Top with club soda and garnish with a lime slice or mint sprig.
